Black Bean and Kale Soup

One bag of black beans, approximately one pound, rinsed

One bundle of kale, vein stripped out and chopped

One onion, chopped

Garlic to taste

Smoked meat, if desired – one or two cups.  I like using a spicy lamb sausage.

8 cups of water

Mix beans, water, garlic, onion and meat to a large pot.  I use a slow cooker and get it going in the morning.  Set on medium or high heat, depending on your cooker.  If on stove top, stir, and reduce heat to low to medium after it begins to simmer.  When beans begin to tenderize, add chopped kale and continue simmering until kale is tender.  Serve hot with corn bread.  Yummy on a rainy day.
